  • Origin & Terroir

    Inga de Aponte is an indigenous reserve near to Aponte, Nariño, home to the Inga people. The community embraced coffee in the early 2000s, transforming their land into one of the most distinctive terroirs in Colombia. Nestled between 1,950 and 2,150 meters above sea level, these farms benefit from fertile volcanic soils and cool Andean winds that favor slow cherry maturation. Coffee here is cultivated by around 10 Inga families, who hand-pick only ripe cherries and carry out every stage of production themselves. The main varietal for this lot is Caturra, producing coffees with clarity, sweetness, and complexity. Each harvest expresses both the resilience of the Inga and the richness of their highland terroir.

  • Process & Roast

    This lot is honey-processed, meaning the bean dries covered in the sugary layer of the cherry (mucilage). The method infuses sweetness and floral notes, creating a profile with chocolate, honey, vanilla, and a delicate citrus sparkle. Drying on raised beds takes 15–20 days, depending on the weather, before the beans are carefully sorted by hand. Roasted to a medium–light profile, it preserves vibrancy and balance, bringing forward layered flavors of chocolate, orange blossom, and honeyed fruit.
