Origin & Terroir
This coffee takes its name from the Sumapaz Natural Park, home to the largest páramo in the world — a unique high-altitude ecosystem that sustains water, biodiversity, and life across Colombia. Within this landscape lies the municipality of Arbeláez, Cundinamarca, where fertile volcanic soils and a temperate climate create ideal conditions for coffee. Here, producer Sergio Polanco cultivates the Castillo varietal at 1,650 meters above sea level, carefully tending each plant to achieve clarity, balance, and natural sweetness in the cup.
Process & Roast
Through the washed process, the beans are carefully fermented and washed to highlight a clean, structured profile. This method brings out bright clarity and balance, where notes of almond, vanilla, and dried fruits shine. Roasted to a medium omni profile, this coffee adapts effortlessly to any preparation — from espresso to filter to traditional Colombian tinto.
